• Planning, organising, directing and controlling the work of employees in the Food & Beverage outlets while ensuring exceptional service and attention to guests.
• Select, train, evaluate, lead, motivate, coach, and discipline employees and managers in the restaurants and lounges to ensure that established cultural and core standards are met; long-range strategic planning for restaurant.
• The ability to work closely with the Chef de Cuisine, Director of Marketing and General Manager, to design effective menus, positioning the restaurant and concept in the market while ensuring not only excellent product quality at a fair price but also creating revenue generation solutions to maximise profit.
