Shisha Sommelier

Summary of Responsibilities:
Responsibilities and essential job functions include but are not limited to the following:     
          
  • To ensure that proper mis-en-place is prepared for each service.
  • Follow health, safety and sanitation guidelines for all products and areas.
  • To ensure that correct handling, use, storage and cleaning of all service equipment.
  • The ability to ensure proper care, security and maintenance of club equipment through proper supervision of service personnel.
  • Set up Shisha station neatly and presentable.
  • Follow store policy and procedures for stocking, rotating and storing products.
  • Ensure that work station is stocked with appropriate condiments at all times.
  • Welcome every Raffles Dubai Residents and Patrons who comes to Crossroads.
  • To assist customers with their choice of Shisha and to take the appropriate orders.
  • To have a full knowledge of Shisha menu and flavor.
  • Reporting of any guest comments regarding food and beverage to Crossroads Management. Assist Crossroads team by responding to requests for additional food or drink service from Crossroads Residents and Patrons.
  • Sign in and out in the logbook before and after shift.
  • To maintain good working relationship as with your own colleagues, and all other departments.
  • Maintain complete knowledge of all F&B services, outlets, hotel services/features and hours of operations, as they affect the areas of responsibility.
  • To ensure that a tight control is kept on all stock used, and that all checks are raised and processed correctly, and are either paid or charged to account at best price.
  • To assist and advise as to the content of the Shisha menu, and offer any
    advice as to particular flavor of Shisha.
  • The ability to train the Crossroads employees in Shisha subject.
  • The ability to liaise with Shisha purveyors in regards to Shisha supplies and ordering.
  • To be responsible for the regular update, addition, subtraction of Shisha on the Shisha menu - whilst liaising with the Crossroads Manager and the Director of F&B.
  • To record, monitor and present a Clear Sales Mix Record to Food and Beverage Management
  • Ensure compliance with hotel and department policies and procedures at all times.
  • To actively promote the services and facilities of Raffles Dubai and Raffles Hotels to guests and suppliers of the Hotel.
  • Help minimize waste, neglect, breakages and mishandling of supplies and equipments.

 
Personal Attributes
  • Average reading, writing and oral proficiency in English. Arabic language is a must.
  • Must be well presented and professionally groomed at all times
  • Communication and customer contact skills
  • Deep Shisha knowledge

Experience
  • Minimum 1 year experience in  similar role
